Simply Healthy Salad
Mixed Greens with Sweet Potato Salad
Ingredients:
Your favorite mixed green leaves
1 small sweet potato
3/4 cup cottage cheese
1/4 cup raisins
For Dressing:
2 tablespoons light mayo
1 tablespoon honey
2 teaspoons lemon juice
salt and pepper
Direction:
1. Rinse and cut sweet potatoes to bite size pieces.
2. In a medium sauce pan, boil and cook sweet potato pieces.
3. Mix dressing ingredients together.
4. When the potato is cooked, drain and mix cottage cheese, raisins, and the dressing.
5. Add salt and pepper to taste.
6. Spread mix greens on the plate and drop desired amount of sweet potato salad in the center.
Easy Main Dish
Lamb Chop with Red Wine Sauce
Ingredients:
6 pieces of lamb chops
Salt and Pepper
4 stems of fresh rosemary (if you can't find it fresh, substitute it with 1/2 tablespoon of dried rosemary)
1 tablespoon of olive oil
For Sauce:
2 tablespoons Ketchup
1 garlic crushed and chopped finely
1/2 teaspoon Salt
2 to 3 table spoons of red wine
Direction:
1. Rub garlic into the meat and sprinkle salt and pepper on both sides.
2. Cover it up and let it rest for about 30min. in the refrigerator.
3. While the meat is resting, bring all of the sauce ingredients to boil.
4. Set it aside and let it cool.
5. Heat the frying pan and add oil and rosemary.
6. When you start to smell the rosemary, take it out and cook the meat on both sides.
7. Add the sauce into the pan and let it simmer until the sauce thickens.
8. Pour sauce over the plate and place the meat in the center. Add rosemary as a garnish.
Easy Tasty Cocktail
Raspberries in White Wine
Ingredients:
Desired amount of white wine(for 2 people)
1 tablespoon lemon juice
1 teaspoon sugar
1/2 cup fresh raspberries or strawberries(thaw if frozen)
Direction:
1. Mix together all of the ingredients and let it rest in refrigerator for up to 30 min.
2. Pour into glass. Enjoy!
